About the dish
Inspired by one of my favorite Mexican street foods, Elote is grilled corn on the cob, slathered in a spicy & creamy chili garlic butter sauce. We took a twist on it & made it into a salad. The spice, acidity & sweetness all work well together & we’ve added shrimp to take it to another level
Ingredients

Knife & board, Bowl, Whisk, Tongs or spatula, Pan or skillet
Chili Lime Dressing
  • Mayonnaise
  • Lime juice
  • Chilli powder
  • Jalapeno powder
  • Garlic clove (Paste)
  • Kosher salt
  • Black pepper
Corn-Poblano
  • Corn kernels (Roasted)
  • Canola Oil (As needed)
  • Poblano pepper (Seeded & chopped)
  • Kosher salt
  • Black pepper
Shrimp
  • Skewers (Soaked in water)
  • Tiger shrimp
  • Jambalaya spice (Blend)
  • Canola oil (If & as needed)
Plate & Serve
  • Baby Romaine (Washed & teared)
  • Avocado (Sliced & lightly salted)
  • Cotija
  • Radish (Thinly sliced, julienne)
  • Micro Cilantro

Chili Lime Dressing

    On a cutting board, halve & devein garlic clove. Using the flat side of your chef knife, firmly press & smear (repeatedly in one direction) clove into a paste (can use a small pinch of salt to help).

    Halve your roasted pepper, remove seeds & pith, then dice.
