About the dish
Chef Oz loves implementing his heritage in most of his recipes. This recipe is a result of years of trying different salads at Cueva Bar while cross utilizing ingredients already in his pantry. This healthy mix of flavors, temperatures & textures resemble potato dishes typical in the north-east part of Mexico where chef Oz is from.
Ingredients

Handheld immersion blender or standard blender, baking pan or dish, knife & board, measuring cups & spoons, plastic bar or container, paper towel, kitchen tongs, mixing bowl
Dressing
  • Medjool date (halved & pitted)
  • Orange (zested & juiced)
  • Extra virgin olive oil
  • White vinegar
  • Freshly ground black pepper
  • Sea salt
Potatoes
  • Fingerling potatoes
  • Extra virgin olive oil (as needed)
  • Red wine vinegar
  • Dried thyme
  • Sea salt
  • Freshly ground black pepper
Poblanos
  • Poblano pepper
Assemble & serve
  • Dressing (prepared)
  • Baby arugula
  • Baked fingerlings (prepared & sliced to medallions)
  • Chevre (optional for dairy-free)
  • Balsamic reduction (as needed)
  • Sea salt
  • Freshly ground black pepper

    Preheat your oven to 420F degrees. Wash & gently scrub potatoes in a cool water bath, then drain well.
