About the dish
My mom makes the best Enchiladas Suizas, which is the inspiration for this recipe. The original recipe calls for poached chicken but with the ever growing vegetarian community, i’ve enjoyed the challenge of creating delicious vegetarian options that even the most decorated carnivores would enjoy & crave.



Ingredients
Tools needed
Board & knife, spatula, ladle, tortilla press (optional), mixing bowl, parchment paper, flat griddle or pan, sauce pot, baking dish, tongs, blender or immersion handheld
Roasted carrots
  • Carrots (top, wash, scrub, dry)
  • Extra virgin olive oil (as needed)
  • Red wine vinegar
  • Thyme
  • Sea salt
  • Black pepper
Tomatillo salsa
  • Tomatillos (washed)
  • Jalpeno (halved, seeded, chopped)
  • Garlic clove (peeled & chopped)
  • Shallot (peeled & chopped)
  • Water (as needed)
  • Ground cumin
  • Cilantro sprigs (wash, dry, stem)
  • Sea salt
  • Black pepper
Tortillas
  • Tortilla masa
  • Parchment paper (cut into 6)
Assemble & serve
  • Carrots (prepared)
  • Tortillas (prepared)
  • Salsa verde (prepared)
  • Mozzarella (shredded)
  • Cotija (crumbled)
  • Cilantro (wash, dry, stem, chopped)

Roasted carrots

    Preheat your oven to 450F. Trim tops & thoroughly wash & scrub carrots. No need to peel, just pat dry.

    While Carrots are in the oven, place all ingredients in a sauce pot & bring to a boil over high heat then reduce heat to low & simmer for 10 mins; remove from heat.

    Once the carrots & salsa are done, preheat a flat-top stove or griddle pan over medium heat.
