About the dish
Chef Oz used to party in DC in the early 2000's. After one night out, he & his friends ended up at Julia's Empanadas, waiting for over an hour to satisfy the late night hunger. The hour wait in the line that went around the block was worth it, so much that it inspired chef Oz, a home cook at that time to start baking empanadas at home. What you get here is years of experimenting. When he & his wife Joanna opened Cueva Bar & decided to put the empanadas on the menu. The recipe you get here won San Diego's best for Empanada, twice.

Ingredients
Tools needed
Knife & board, rolling pin, food processor, baking dish, aluminum foil, fork, mixing bowl, pastry brush, parchment paper or silicone slip mat
Empanada dough
  • Flour (measured & sifted)
  • Flour (sift for dusting & kneading)
  • Shortening
  • Sea salt
  • Water
Braised brisket
  • Beef brisket
  • Sea salt
  • Black pepper
  • Cinnamon
  • Red wine (Cabernet Sauvignon)
Chimichurri
  • Parsley (wash, drain, stem, chopped)
  • Extra virgin olive oil
  • White vinegar
  • Sea salt
  • Black pepper
  • Red pepper flakes
  • Garlic cloves (peeled & veined)
Assemble, bake & serve
  • Shallots (peeled & thinly sliced)
  • Extra virgin olive oil
  • Mozzarella (shredded)
  • Empanada discs (prepared)
  • Braised brisket (prepared)
  • Egg (beaten w/ 1 tbsp water)

Method
Empanada dough
  • 01

    In a stand mixer with a paddle attachment (or by hand in a bowl), mix all ingredients together till dough comes together. Turn out onto flour-dusted work surface, fold & knead till smooth & uniform, 5-8 mins.

  • 01

    In a bowl, mix together the spices & dry seasoning. Preheat your oven to 400F as well.

Chimichurri
  • 01

    Add all ingredients (except parsley) in a food processor, pulse to chop till well incorporated & smooth.

Assemble, bake & serve

    Gently saute sliced shallots in an oiled pan over medium heat till tender & golden. Set aside to cool.
