About the dish
This pasty came about by a regular customer's request & proved to be one of our most popular dishes. Curry became the British national dish some years ago & the Tikka Masala recipe was actually created for the British, so what better way to fill a Cornish shortcrust pastry shell.

Mixing bowl, Knife & board, Spatula, Baking sheet, Cooling rack, Basting brush, Thermometer, Sauce pan, Rolling pin, Parchment
Pastry Dough
  • All purpose flower (Sifted)
  • Powdered sugar (Sifted)
  • Butter (Cubed & chilled)
  • Egg (Separated, yolk only)
  • Water (Cold)
  • Salt (Sea salt recommended, 1 pinch)
Chicken Tikka Masala Filling
  • Chicken breast
  • Tikka masala paste
  • Heavy cream
  • Onion (1/2 inch diced)
  • Cornstarch
  • Pepper
Assemble & Bake
  • Egg (Beaten)
  • Water (For egg wash)
  • Salt (Sea salt recommended)
  • Prepared pastry dough
  • Prepared tikka masala filling

    Dice up your cold butter into small cubes, transfer to a plate & return the refrigerator.

Chicken Tikka Masala Filling

    In a large mixing bowl, combine together the paste & cream. Add onions & chicken, mix well to thoroughly coat, then season with pepper.

Assemble & Bake
  • 01

    Remove pastry circle from the refrigerator. Lightly dust your counter or work space with flour (along with the rolling pin) & carefully roll out the pastry to aprx 1/4 inch thickness. Using a small side dish as a guide, trace around the plate with a knife or pizza wheel to cut four 8 inch rounds. (Pro Tip: Scraps may be combined & formed to roll out into the fourth 8 inch round if you only got three out of the first batch.)
