  • White vinegar
  • Green onion (chopped)

  • Freshly ground black pepper
  • Limes (zest only)
  • Whole chicken (quartered, skin-on)
Blackberry compote
  • Blackberries
  • Sugar

Chimichurri
  • Limes (juice the limes you zested)
  • Parsley (rough chop)
  • Cilantro (rough chop)
  • Oregano (stemmed)
  • Thyme (stemmed)
  • Mint (stemmed)
  • Crushed red pepper

Chicken Marinade & Roast

    Combine all but the chicken in a large bowl and stir to mix. Add chicken to the bowl and coat evenly. Cover and refrigerate for 6 hours.

Blackberry compote

    Place blackberries, sugar & water in your saucepan, over medium heat. Cook (stirring occasionally) till the berries become soft & begin to break down, aprx 4-5 mins. Remove from heat & let cool.

    Combine all ingredients (except oil) in a blender and pulse gently.

    Trim just the very ends of the stems, halve any thick stalks too, the rest can be cooked & served whole.

Frying chicken
  • 01

    Once chicken is roasted, remove from oven and set aside. Preheat oil in a large pot to 350F and use tongs to place chicken pieces in the oil to fry. Work in batches or even one at a time.

    While roasting chicken, cut yuca in 1/4" thick slices, alternately use a mandoline to make slices 1/8" thick.
