  • Jalapeno (halved & seeded)
  • Garlic clove (smashed)
  • Tomato (halved)
  • Onion (quartered)
  • Canola oil
  • Cilantro (leaves only)

  • Red wine vinegar
  • Water (as needed)
Crema
  • Heavy cream
  • Sour cream
  • Lime (juice from 1-2 wedges)

    Combine aprx 1 tbsp of cilantro and all other ingredients in a bowl and mix well, taste for seasoning.

    Preheat oven to 350F. Toss jalapeno, garlic, tomato, and onion with 2 teaspoons of oil and place on a sheet pan. Roast in oven until blistered and starting to brown, aprx 15 mins.

    Whisk together all ingredients in a bowl, then wrap and set aside at room temp till ready to use.
