About the dish

Two different types of persimmons are used in this bundt cake since one is sweet and the other is tart. One of my favorite ways to add a unique savory tartness to dessert is with pickled fruit. My recipe for pickled blueberries will leave you with extra to play around with later. It will keep in your refrigerator for a few weeks and is an amazing addition to pork, duck, goat cheese, and more.

2-3 mini bundt molds (or 1 med bundt pan), knife, Cutting board, Bowl, Whisk, Spatula, Mixer (optional)

Unsalted butter
Granulated sugar
Large egg
Vanilla extract
All purpose flour
Baking powder
Sea salt
Ground cinnamon
Fuyu persimmons (medium dice)
Walnuts (chopped)
Hachiya persimmon (large dice)
Whole milk

Bake & serve

Powdered sugar
Strawberries (washed & halved)

Preheat your oven to 375F. Combine butter, sugar and eggs in a Kitchen Aid Mixer using the paddle attachment. Cream until light and fluffy, on medium speed.
