Combine all ingredients (except for olive oil) in the blender. Pulse & blend until all are combined, then slowly drizzle in the olive oil until mixture is emulsified. Using a rubber spatula, transfer dressing from blender to bowl, cover & set aside.
In a clean dry bowl, melt the butter & couverture over a double boiler with lightly simmering water.
In another mixing bowl with a hand mixer, beat the eggs & yolks with sugar & salt at high speed until thick & pale.
Stir the melted chocolate mixture till smooth, then quickly fold into the fluffy egg mixture (along with the flour) just until fully incorporated. Spoon the batter into the prepared ramekins & you're ready to bake.
