About the dish

There's something about sausage & shellfish that makes a perfect pairing. Although the origins of this dish are heavily influenced by the Spanish, I use an Italian sausage & love the additional flavor & aroma from the fennel.

Italian sausage (crumbled)
Garlic (minced)
sun dried tomatoes (thinly sliced)
Paprika
White wine (Pino Grigio)
Butter (cubed)
Clams (scrubbed & soaked)
Parsley (chopped)
Romano cheese (shredded)
French petits baguette (toasted)

Clams w/ Italian Sausage

Preheat an oiled heavy-bottom saucepan over medium heat. Using a wooden spoon to stir, brown off sausage until golden brown & cooked through. Mix in minced garlic, sliced sun dried tomatoes & half of the parsley, stir together & cook for a minute. Add the paprika, cook for 1 more minute.
