About the dish
If you haven't brined duck before you'll taste how worthwhile it is, with every bite. Pickling is a passion of mine and i hope you'll love this giardiniere so much that you'll want an extra bottle of it to put on everything.

Duck Brine
  • Water (warmed)
  • Kosher salt
  • Sugar
  • Juniper berries
  • Bay leaves
  • Duck legs
  • Duck breast
Roast Duck
  • Olive oil (as needed)
  • Yellow onion (diced)
  • Carrots (diced)
  • Celery (diced)
  • Fennel stalks (diced)
  • Sea salt
  • Freshly ground black pepper
  • Giardiniere
Blackberry compote
  • Blackberries
  • Sugar
  • Water
Corn Ragout
  • Smoked bacon (sliced 1/2" thick)
  • Sage leaves (chopped)
  • Fennel bulb (dice)
  • Corn kernels
  • Chicken broth
  • Butter
  • Italian parsley (finely chopped)
  • Sea salt
  • Freshly ground black pepper

    Preheat your oven to 400F degrees. Add the prepared onion, carrot, celery and fennel to a roasting pan & lightly toss in oil.

    Place blackberries, sugar & water in your saucepan, over medium heat. Cook (stirring occasionally) till the berries become soft & begin to break down, aprx 4-5 mins. Remove from heat & let cool.

    Heat a large skillet over medium-high heat, stir in the sliced bacon and sear. Add the sage to the skillet and continue to cook until the bacon starts to brown.
