In a large mixing bowl with the potatoes & seasonings, add in the oil & toss to coat well. Arrange on a baking sheet or pan & bake in a preheated 425F degree oven for aprx 25 mins (Stirred every 10 mins). Trim 1 inch off of broccolini stems. Place broccolini in a large pot of boiling water, for 1-2 mins till bright green but still firm. Remove & place in ice bath for 1 min to stop internal cooking.
