    In a well oiled large heavy-bottom stock pot over medium heat, add beef, pork, pancetta & vegetables; cook (breaking up meat with a wooden spoon) till moisture is almost completely evaporated & meat is well browned, aprx 25-30 mins. Season with salt & pepper, to taste.

    In a saucepan heat butter over medium heat till foaming, add flour; cook (whisking constantly) for 1 min.

    In a large pot, bring 4 qts of salted water to a boil. Working in batches cook lasagna noodles 5-7 mins or until just tender. (Pro-Tip: Once cooked & drained, layer noodles between parchment so they don’t stick together.)
