About the dish
I have fond childhood memories of this iconic Greek dish, from it being a favorite of mine of my Yaya Antigoni's repertoire, to practically the only thing i would order & eat at the hotel where we’d stay on our island vacations.

Base
  • Rigatoni (boiled to just al dente)
  • Butter (melted)
  • Pecorino Romano (shredded)
  • Ground nutmeg
  • Sea salt & black pepper
  • Eggs (whisked)
Meat Ragu
  • Extra virgin olive oil
  • Ground beef
  • Ground lamb
  • Sweet onion (finely diced)
  • Garlic cloves (minced)
  • Bay leaf
  • Sea salt
  • Black pepper
  • Ground cinnamon
  • Dried thyme
  • Tomato paste
  • Red wine (Cabernet)
  • Tomato (diced)
  • Parsley (stemmed & chopped)
Bechamel
  • Butter
  • All purpose flour
  • Whole milk (chilled)

    Par-boil pasta in generously salted water till just al dente, strain thoroughly & transfer to a mixing bowl. Mix in the melted butter, shredded cheese & season with salt & pepper. Lastly stir in the whisked eggs.

    Sear the ground meats in an oiled saucepan over medium-high heat, browning while crumbling with a wooden spoon, then transfer to a plate.

Bechamel
  • 01

    Dice 1/2 cup of butter & melt in a deep saucepan over medium heat (do not burn). Stir in flour & cook for aprx 5 min, constantly stirring, until it loses its raw flour smell.

    Layer in the pasta mixture along the bottom of a rectangle pan (ie Pyrex 11cp 9.1 x 7.1 x 3.5").
