About the dish
Happy to share one of my favorites with you. This easy but delicious dish is great to have in your repertoire! All three components hold up on their own & are versatile to mix & match with other sides or proteins.

Chimichurri
  • Cilantro (Chopped)
  • Parsley (Chopped)
  • Oregano (Chopped)
  • Jalepeno (Seeded & pith removed)
  • Garlic cloves
  • Red wine vinegar
  • Sea salt
  • Olive oil
Puree
  • Celery root (Peeled & cubed)
  • Lemon (Zested)
  • Butter
  • Cream
  • Sea salt
  • White pepper
Vegetables
  • Baby squash (Halved)
  • Haricot verts
  • Leeks (White part, sliced)
Sea Bass
  • Sea Bass
  • Sea salt & black pepper
  • Cooking oil (As needed)
  • Leeks (Green part, thinly sliced)

Method
Chimichurri
  • 01

    Put all the herbs, jalapeno & garlic in to a food processor. Add the vinegar, salt & pulse briefly. Once the herbs are mixed with the vinegar, slowly drizzle the olive oil into the food processor just until all of the ingredients are combined. That’s it, you’re done! Wrap & set aside for plating.

Puree

    Place the peeled & cut celery root in a pot with water & boil until tender. With a slotted spoon strain out celery root & transfer to a blender, season with salt & pepper.

    In a large pot with water brought to a boil, blanch halved squash & haricot verts till just tender.

Sea Bass
  • 01

    Rinse & pat dry your fillet. Cut your sea bass into two 8 oz portions, approximately of course. Make sure your knife is as sharp as it’s ever been!

    Select your plates, portion & position a hearty dalop of puree, smear with the back of a spoon or off-set spatula.
