About the dish
A delightful culinary marriage between old world India & Persia. Unlike the traditional mild & meaty Loubiah Polo, ours is a bit spicy & accompanied with baked tofu.

  • Green beans (Washed, tailed, halved)

Method
Baked Tofu

    Drain, then wrap block of tofu in paper towels, place in a shallow bowl with a plate on top weighed down with a can or jar from you pantry. Leave it to press for aprx 45 mins, drain & re-wrap halfway through.

Loubiah Polo
  • 01

    While your tofu is still in the oven, heat oil in a large pan over medium heat & sweat onions till translucent. Add & saute garlic until golden, do not burn.

Basmati Rice
  • 01

    Rinse the rice thoroughly with water to remove any excess starch. Soak the rice with plenty of water for 30 mins (in a separate bowl or pot that you'll use to cook rice later), then drain.

    Mix tomato & green bean sauce thoroughly but gently into the fluffed rice. Taste & adjust seasoning.
