    Skewer chicken pieces (& onion - optional), bake or grill till done (6-10 mins), turning once & brushing with marinade while cooking. (Pro Tip: Cook chicken in a preheated grill or oven, while rice is cooling/fluffing on a tray.)

Candied Citrus

    Using a potato peeler or knife, remove the rind of the orange. Lay peel pieces (orange side down) on your cutting board, carefully remove & discard the white pith using a sharp knife (like filleting a fish). Thinly slice orange rinds into julienne size strips.

    Rinse the rice thoroughly with water to remove any excess starch. Soak the rice with plenty of water for 30 mins (in a separate bowl or pot that you\\\'ll use to cook rice later), then drain.
