  • Russet potatoes
  • Vegetable oil
  • Parsley (stemmed & chopped)
  • Freshly ground black pepper
  • Sea salt
Mussels
  • Green lipped mussels (scrubbed)
  • Shallot (peeled & finely minced)
  • Garlic cloves (finely minced)
  • White wine (dry Chardonnay)
  • Cream
  • Butter
  • Parsley (stemmed & chopped)
  • Red pepper flakes (as needed)
  • Sea salt
  • Freshly ground black pepper

    Peel potatoes, slice then cut slices into 1/4-inch matchsticks. While prepping, keep the cut fries in a cool water bath to prevent them from browning. (Pro Tip: Before frying, drain thoroughly & spread out on a kitchen towel lined tray to dry a bit further.) (Note: Baking? Drizzle w/oil & sprinkle w/pepper, bake 45 mins at 450F. Finish w/salt & parsley.)

Mussels

    Thoroughly scrub mussels under running water in the sink with a brush; carefully removing beards (the stringy elastic fibers hanging off the underside) with your thumb & forefinger to pinch & pull towards the hinge of the shell; then rinse mussels off in an ice water bath. (Pro Tip: If pathogens or germs are present, mussel will smell overwhelmingly bad; discard.)
