Peel potatoes, slice then cut slices into 1/4-inch matchsticks. While prepping, keep the cut fries in a cool water bath to prevent them from browning. Thoroughly scrub mussels under running water in the sink with a brush; carefully removing beards (the stringy elastic fibers hanging off the underside) with your thumb & forefinger to pinch & pull towards the hinge of the shell; then rinse mussels off in an ice water bath.
