In a deep saucepan over medium-high heat, bring juice to a boil. Add & dissolve sugar, add the reserved zest, reduce heat to a simmer & cook until mixture reduces slightly (aprx 5 mins).

In a double boiler over simmering water, completely melt butter. Skim foam that rises to the surface with a spoon. Continue this process until no more foam rises (aprx 15+ mins). Remove from heat & carefully strain through a folded cheesecloth or a fine wire strainer.
