  • Shitake mushrooms (stemmed and sliced)

    In a small saucepan over medium heat bring coconut milk to a boil then whisk in the curry paste and reduce heat to a simmer; whisking continuously until curry is completely dissolved in coconut milk.

Roast & saute vegetables

    Add roasted potatoes and carrots to saute pan with shiitake and brown lightly; then add the broccolini and cook until just slightly tender, aprx 4 mins.
