In an oiled heavy bottom skillet over medium-high heat, sear sea bass till golden brown, aprx 3-4 mins on each side. Then, remove fish from pan. (Pro-Tip: You should be able easily flip fish, if it is sticking to the pan it isn't completely seared.)
