  • Shallot (Peeled & fine diced)
  • Garlic clove (Peeled & crushed)
  • Oyster mushrooms (Chopped)
  • Arborio rice
  • Peas (Thawed)
  • Unsalted butter
  • Pecorino romano (Grated)
  • Salt
  • Pepper
Sugo
  • Olive oil (As needed)
  • Shallot (Fine diced)
  • Garlic cloves (Peeled & crushed)
  • Pear tomatoes
  • Granulated sugar
  • Sea salt
  • Black pepper
  • Basil (Stemmed & chopped)
Arancini
  • Fresh mozzarella (Cubed 10 pieces)
  • All purpose flour
  • Eggs (Whisked)
  • Italian breadcrumbs
  • Olive oil (As needed)
  • Prepared risotto

    Bring vegetable stock to a simmer in a pot, cover & reduce heat to the lowest setting to keep hot.

    In a pot lined with oil & over medium heat, saute shallot until translucent (3-5 mins), then add crushed garlic & gently cook without browning or burning, aprx 1-2 mins.

    Scoop a small handful of risotto & press it flat in your palm & place a cube of mozzarella in the center. (Pro Tip: Have a bowl of water near to keep the palms of your hands wet while working with the rice.)
