Nothing like rolling & cutting gnocchi to bring back fond memories of weekend mornings with grandma. This old Italian classic gets a fun new twist with my pistachio pesto.

Pistachio Pesto
  • Basil (Loosely packed leaves)
  • Pistachios
  • Garlic cloves (Peeled)
  • Olive oil
  • Salt & pepper (Sea salt recommended)
Potato Gnocchi
  • Potatoes (roasted & riced)
  • All purpose flour (sifted & 1/2 cup reserved)
  • Eggs (room temp & beaten)
  • Salt (sea salt recommended)
Assemble & Serve
  • Prepared Pistachio Pesto
  • Prepared Potato Gnocchi
  • Parmigiano Reggiano
