This is one of our favorites amongst our coastal cuisine style dishes. It's a surprisingly simple dish to make with very clean & ingredient-forward components & accompaniments.
Ingredients

Saute pan, Baking tray, Spatula, Mixing bowl, Knife & board, Masher or ricer (Optional), Brush (Optional)
Yam & Potato Puree
  • Yam (Scrubbed & rinsed)
  • Potato (Scrubbed & rinsed)
  • Pecorino romano (Grated)
  • Salt (Sea salt recommended)
  • Pepper
Salmone
  • Salmone fillets
  • Canola oil (As needed)
  • Dijon mustard
  • Lemon juice
  • Crushed pistachio nuts
  • Salt (Sea salt recommended)
  • Pepper
Cream Sauce
  • Shallots (Minced)
  • Butter
  • Heavy cream
  • Grain mustard
  • Salt (Sea salt recommended)
  • Pepper
Assemble & Serve
  • Prepared Yam & Potato Puree
  • Prepared Salmone

    While your yam & potato are in the oven, start preparing the salmon. While the salmon is finishing in the oven, puree your yam & potato, & make your sauce.

    Whole roast yam & potato on a sheet tray in a preheated 400F degree oven for 45-60 mins till tender.

Salmone
  • 01

    Rinse fish well & pat dry thoroughly. Season both sides well with sea salt & fresh cracked black pepper. (Note: At this time preheat your oven to 375F degrees.)

Cream Sauce

    In a saucepan with the butter heated over medium low heat, gently but thoroughly saute shallots (do not over brown) aprx 3 mins.

Assemble & Serve

    In a wide shallow bowl or deep rimmed plate, spoon a large dollop of puree in the center, place the salmon (pistachio side up) on top, spoon sauce around the puree & top the fillet with some micro basil. (Pro Tip: Try it with a glass of chilled Italian Pinot Grigio or your favorite crisp white wine.)
