About the dish
Inspiration for this dish comes from my Spanish influence. Romesco is a roasted red pepper sauce from Catalonia, Spain. The fishermen make this sauce to go with their fish, and there is a reason it became a staple in Spain. It’s even great with pork, vegetables, fresh bread, you name it.

Romesco Sauce

    Combine all ingredients together & blend using an immersion blender or stander blender.

    In a rondeau or deep heavy-bottom saucepan, heat 1 tbsp of oil over medium-low heat. Add the cipollini & gently saute (do not brown) for 3-5 min, then add the rice & toast lightly (aprx 1-2 min).

    Preheat your oven to 325F degrees. (If your saute pan is not oven-safe, preheat a lightly oiled foil lined baking tray.)

Plate & Serve

    Dot romesco sauce on one side of your dinner plates, place risotto on alternate side. Sea bass goes on top of the risotto, garnished with watercress. Serve immediately & stand by for compliments.
