Spatchcocked chicken is a great way to prepare a whole bird. By removing the spine & flattening the chicken you get a more even cook, plus it also cooks a little faster.

    In a dry heavy bottomed saucepan over medium heat, toast the cocoa nibs & sesame seeds. Grind them in a spice grinder or use a mortar & pestle.

    In a blender or food processor, add & pulse together: corn, cream, onion & eggs, till smooth. Then add your cotija cheese, corn meal, salt & pepper, & mix again until smooth.

    Dice up all of your vegetables & lay them out on a lightly greased sheet tray, set aside.
