About the dish
Freshwater eel (Unagi) at one time was one of our best selling products. However after extensive research we discovered the harm this one farm-raised fish was causing on our delicate ecosystem & that there was no alternatives anywhere to be found. We experimented with several different products to try & replicate the uniquely succulent flavor & that highly desired umami complexity of Unagi. Our quest came to an end when we found out that properly marinated black cod (butterfish, sablefish) baked to a crispy texture was not just like unagi, but better! We’ve even replaced our eel sauce with our in-house faux-nagi sauce, made from black cod.

    Mix all ingredients well in a pot over medium heat, to dissolve sugar.

    In a heavy bottom pot, with your hand, lightly rinse your rice under cold running water, 2-3 times. (Pro Tip: Rinse rice completely & thoroughly if you're using a rice cooker instead of a stove-top pot.)

Sharizu

    While rice is cooking, combine all ingredients in a pot, dissolve over medium heat & cook for 3 mins.

Sushi Rice

    Turn rice out onto a large mixing bowl & remove the bottom layer if colored or dried out. With a wet paddle split up rice mound, pour in Sharizu (sushi su) & gently fold in, to completely mix with the rice.
