Drain, then wrap block of tofu in paper towels, place in a shallow bowl with a plate on top weighed down with a can or jar from you pantry. Leave it to press for aprx 45 mins, drain & re-wrap halfway through.

While your tofu is still in the oven, heat oil in a large pan over medium heat & sweat onions till translucent. Add & saute garlic until golden, do not burn.

Rinse the rice thoroughly with water to remove any excess starch. Soak the rice with plenty of water for 30 mins (in a separate bowl or pot that you'll use to cook rice later), then drain.
