    In a large pot over medium heat, sweat onions till just tender & translucent (aprx 6 mins), then add garlic & saute till golden (do not burn).

    On the grill, or in a large skillet or heavy bottom saucepan oiled & over medium-high heat, sear the tentacles well (on both sides) to brown or charred the surface. (Pro Tip: You can push down with lid or spatula or panini press to help the browning/marking process.)
