Two different types of persimmons are used in this bundt cake since one is sweet and the other is tart. One of my favorite ways to add a unique savory tartness to dessert is with pickled fruit. My recipe for pickled blueberries will leave you with extra to play around with later. It will keep in your refrigerator for a few weeks and is an amazing addition to pork, duck, goat cheese, and more.
