Zucchini

Diced tomato
Parsley (stemmed & chopped)

In a fine wire mesh colander, rinse quinoa under cool running water & allow to drain well. (Pro Tip: Prep all vegetables now so you can easily cook both dish components at the same time.)

Ratatouille

Trim top & bottom off eggplant, then peel. Dice (1/4"), salt & let eggplant drain in a colander for 10 mins. Press to extract bitter liquid & thoroughly pat dry. Uniformly dice all of the other vegetables, 1/4" as well.
