About the dish
Growing up, my mom & my nanny would make green enchiladas, red enchiladas, entomatadas & enmoladas on a rotating basis. Enmoladas are just like enchiladas, but with mole. In this recipe I keeps it simple, but don't feel fooled with the simplicity because the layers of flavor from the mole will explode on your palate.

Frying pan, sauce pot, tortilla press (optional), parchment paper, flat griddle or pan, slotted spoon or strainer, baking dish, cooking thermometer
Chicken
  • Chicken breasts
  • Water
  • Sea salt
  • Garlic clove
Mole
  • Chef Oz' Mole
  • Chicken cooking liquid (prepared)
  • Sea salt
  • Black pepper
Blackberry compote
  • Blackberries
  • Sugar
  • Water
Tortillas
  • Tortilla masa
  • Parchment paper (cut into 6" circles)

Chicken

    Place breast in your saucepot with aprx 1 tsp of salt & garlic, pour in the water & bring to a boil over medium-high heat. Cover, reduce heat to low & simmer till chicken is cooked through, aprx 15 mins. (Pro Tip: Use a cooking thermometer to ensure you’ve reached 165F internal temperature.)

Mole

    In a saucepan with the hot cooking liquid, stir in the mole paste to incorporate well. Gently bring to a simmer over medium heat.

Blackberry compote
  • 01

    Place blackberries, sugar & water in your saucepan, over medium heat. Cook (stirring occasionally) till the berries become soft & begin to break down, aprx 4-5 mins. Remove from heat & let cool.

    Once chicken is poached & mole sauce is ready, preheat a flat griddle or griddle pan over medium heat.
